Three, 3 day Weekends summer 2026
Level I: Learn GAPS Cooking
(Gut and Psychology Syndrome™ and Gut and Physiology Syndrome™ Nutritional Protocols)
Join Monica Corrado, MA, CNC, CGP - The GAPS Chef™, in the kitchen for three day weekends in Northern Colorado this summer!
You may take one, two, or all three weekends! If you take all three, you will save on the registration cost.
All are welcome! Certified GAPS Practitioners (CGPs) and Certified GAPS Coaches (CGCs) are welcome to attend for a live, in-person refresher on your training!
If you take all three, you may choose to test to become certified as a GAPS Certified Cook!
Level I can go on to take Level II: Learn to Teach and earn the title GAPS Certified Cooking Educator. (CGPs and CGCs can also request to test out of Level I and apply for Level II.) This level is for those who would like to earn a credential to teach GAPS cooking classes, as well as those who would like to be restaurant consultants on GAPS principles. For those who would like to go into food production after passing Level I, they can take further training to earn the title GAPS Certified Industry Professional. Level II and GAPS Certified Industry Professional training will begin in 2027.

Everything you need to know about Culturing Dairy for GAPS: The milk, the cream. Yogurt, Kefir, GAPS Sour Cream, Kefir Cream, Cultured Butter, and Ghee.
Everything you need to know about Nuts and Seeds for GAPS: Soaking, Sprouting, Fermenting. Nuts, Seeds, Beans, Legumes. Baking with fermented nut or seed flour, with variations.

All weekends start at 12:00pm MT on Friday, and end on Sunday at 6:00pm MT.
